store openings

I am running a bbq pop up store so what I need to be able to do is select a date that I want to open, and also set a day when pre orders are open from until a cut off point of my choosing. so lets say I want to open on the 30th November for one day with my certain time slots. I want to let people have a three week window of being able to pre order, then have a cut off point of a week before the day I am due to open.
